Easier, is to just cook it up and put it in a jar! Well, that is what I thought when I set out to make this. However, it proved extremely problematic, and I spent over a week trying to make this successfully and had to throw everything away after endless disasters.

Then, I tried one last time, and made a math mistake that turned out to be the key to success. It has twice the cream and twice the passion fruit in it, and boy is this intense.

Made using the very best local butter and cream, passion fruit puree, fleur de sel French sea salt it is simply the gold standard for caramel sauce. This is a very early jam we made before we started as a company.

In , we discovered a swath of wild blackberry bushes up in Tilden park in the Berkeley hills and picked about two grocery bags full. Back at home we cooked them up with a touch a vanilla and it was a huge hit with our friends and family.

Making kumquat marmalade has been an annual tradition we have been doing for 18 years. We are probably the only company that makes commercial kumquat marmalade because it is labor intensive to remove all the seeds individually. However, unlike the Seville or bergamont oranges normally used for marmalade, the kumquats offer a super fresh and tantelizing citrus flavor that is unmatched in my opinion and marmalade is my favorite preserve.

However, kumquats are small fruits with thin skin and are picked in January and February in California. This coincides with our rainy season and if the fruit gets too wet it will rot on the tree. It also cannot be picked when wet or it will rot almost immediately after. Cold weather can freeze the fruit and ruin it.

Increasingly our grower had lost fruit and we have struggled to find kumquats. This is finally a good year. Stock up - it has a very long shelf life! Tangy kumquats are combined with ripe apricots to create a favorite among our customers.

It is half a marmalade and half a jam with a beautiful vibrant orange color and a taste to match. This is truely a delicious jam.

This is based on my love for Okonomiyaki sauce - a sweet, tangy, savory, and not spicy sauce popular in Japan.

The advantage of this sauce is unlike western style bbq sauces that have heat in then, this doesn't so it can pair well with many more foods and you can have it for breakfast on eggs - my favorite!.

However, it has similar ingredients and I think with my own interpretation we can call it a BBQ sauce.

It does have Worcestershire sauce in it, a key ingredient in Okonomiyaki and gives this sauce a very unique taste - so if you have fish allergies anchovies you cannot eat it.

It is based around molasses, dark cane sugar, a good amount of cider vinegar for tang and the addition of bourbon, espresso, fresh apple cider, our famous ketchup and a variety of spices and peppers.

One of the spices is a five spice blend, which gives it just the faintest anise flavor from the fennel and star anise. It has more heat to it than our other bbq sauce.

When I am too tired to cook, I will grab a rotisserie chicken at the supermarket and just dip the meat into this sauce. No matter how much sauce I pour on the plate, it is never enough.

This is our special summer Blenheim apricot jam. Unlike the standard Blenheim apricot below, that uses field run apricots a mix of ripe, semi-ripe and green fruit the special apricot we make in a very small amount using only ripe fruit we hand select.

Eric above is picking out apricots for this jam at the farm. The difference in flavor is more intense. Due to the fragile nature of ripe Blenehims that need to be processed very quickly, we can only make a small amount these days due to high demands in the summer for all our other products.

But you can thicken it quickly by dumping it in a small sauce pan, boiling about 30 seconds and then dumping back in the jar if you want. After apricot season, it is plum season and the Mariposa plums are some of our favorite.

It is based around molasses, dark cane sugar, a good amount of cider vinegar for tang and the addition of bourbon, espresso, fresh apple cider, our famous ketchup and a variety of spices and peppers.

One of the spices is a five spice blend, which gives it just the faintest anise flavor from the fennel and star anise. It has more heat to it than our other bbq sauce. When I am too tired to cook, I will grab a rotisserie chicken at the supermarket and just dip the meat into this sauce.

No matter how much sauce I pour on the plate, it is never enough. This is our special summer Blenheim apricot jam. Unlike the standard Blenheim apricot below, that uses field run apricots a mix of ripe, semi-ripe and green fruit the special apricot we make in a very small amount using only ripe fruit we hand select.

Eric above is picking out apricots for this jam at the farm. The difference in flavor is more intense. Due to the fragile nature of ripe Blenehims that need to be processed very quickly, we can only make a small amount these days due to high demands in the summer for all our other products.

In order to maximize the fruit and make enough, we didn't cook the jam as long as usual to thicken it. It is more runny. But you can thicken it quickly by dumping it in a small sauce pan, boiling about 30 seconds and then dumping back in the jar if you want.

After apricot season, it is plum season and the Mariposa plums are some of our favorite. A delicious plum with a uniquely delicate perfumy, floral flavor that lingers. The Mariposa, thanks to us, has been added to Slow Food USA's Ark of Taste - a list of endangered crops or food practices.

It was there that I discovered a woman who was a commercial bee keeper and was selling blackberry blossom honey. The flavor really was incredible, and the jar I bought from her I savored like it was the last one on earth.

When I started welovejam, I tracked her down and we were going to sell her honey but for whatever reason we never did and I lost her contact information.

Fast forward nearly 12 years and we are proud to offer this incredible honey from another bee keeper from Washington State, who also collects the honey from black berry crops, just as she did.

It is very tricky to make since there is no added pectin, and the pectin levels of the fruit and how we cook it varies a little each year, making some years a success and some a dud. We originally made this from limequats, but the farmer who grew these tore up the trees because they didn't produce enough fruit. We improvized using kumquats and fresh lime juice and zest and have exactly matched the flavor of the original limequat.

The flavor is a pleasingly tart key lime flavor that literally dances on your tongue. It has the added complexity of the kumquat which has an orange like flavor. Out of all the products I made, this is my favorite, and I always keep a case at home to last me the year.
